Apple & Walnut Stuffing Recipe

Apple and walnut is another popular stuffing for goose and duck.

ingredients

enough for a 2.5kg duck
1 small onion
1 tbsp (1/2 oz) butter
1 large cooking apple
12 whole shelled walnuts or 24 halves
2 oz (50 g) pork sausage-meat
3/4 cup (50 g) soft white breadcrumbs
1/2 tsp dried mixed herbs
salt and pepper
1 egg
a little milk (optional)

method

1. Skin the onion and chop it finely.

2. Melt the butter in a pan, add the onion, and fry very gently until softened and light golden.

3. Peel, core, and chop the apple.

4. Chop the walnuts and mix together with the onion, apple, sausage-meat, breadcrumbs, and herbs.

5. Season to taste.

6. Beat the egg until liquid and stir into the stuffing mixture to bind it, adding a little milk if necessary.
